Alibernet – Dunaj – St. Laurent

First impression: this wine is like an artist who doesn’t crave fame, yet is celebrated. Named for its colour (bíboros i.e. cardinal in Hungarian), but carries other traits of cardinals too: full-bodied, confident, thought-provoking. An unrepeatable experiment, the result of three wines meeting at the right spot. Ages well.

Processing: Dunaj harvested in Mužla with 32.5 sugar-level got fermented in tubs with St. Laurent from Bajtava without stem for 3 weeks, rammed gently. Alibernet from Strekov (no time spent on skin) mixed in as a rosé stum mid-November. The trio was aging for 2 years in a 225 liter used French barrel. No sulphur got added.
